Peach & Bacon Pancakes with Lavender Butter Syrup

Ingredients:

for the pancakes:

1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 egg
1 teaspoon kosher salt
1 1/4 cups whole milk
1 tablespoon granulated sugar
3 tablespoons unsalted butter, melted
2 tablespoons peaches, diced
2 slices cooked bacon, diced

for the lavender butter syrup:

1/2 stick unsalted butter, melted
1/2 cup maple syrup
2 tablespoons lavender

Directions:

for the pancakes:

In a mixing bowl, combine the flour, baking powder, egg, sugar, and kosher salt. In a separate large bowl, stir together the whole milk, melted butter, diced peaches, and diced cooked bacon. Add the dry ingredients to the wet ingredients a little at a time, stirring just until the batter comes together. Do not overmix; a few small lumps are fine and will help keep the pancakes tender.
Preheat a skillet over medium heat and coat it lightly with non-stick cooking spray. Ladle about 1/4 cup of pancake batter into the skillet for each pancake.
