Ingredients

  • 2 – 15 ounce cans corn, drained
  • 1 red bell pepper, diced
  • 6 green onions, thinly sliced
  • 1.5 cups shredded cheddar
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1–2 tablespoons adobo sauce (optional)
  • 1 bag Chili Cheese Fritos, crushed just before serving

Instructions

  1. Drain the canned corn and transfer it to a large mixing bowl.
  2. Dice the red bell pepper and thinly slice the green onions.
  3. Add the chopped pepper, green onions, and shredded cheddar to the corn.
  4. Whisk together the mayonnaise, sour cream, and adobo sauce if using. Pour the dressing over the corn mixture and toss until evenly coated.
  5. When ready to serve, crush the Chili Cheese Fritos and gently fold them into the salad so they retain some crunch. Serve immediately.

Notes
