The base is a simple guacamole made with ripe avocados, lime juice, cilantro, and salt. It adds creaminess and helps hold the shrimp and toppings in place on the tostada shells. Ingredients for Shrimp Tostadas.

Ingredients

For the Sauce:

  • Mayonnaise: Full-fat mayonnaise gives the sauce a rich, creamy texture.
  • Sour Cream: Sour cream adds tang and balances the heat from the sriracha.
  • Sriracha: One tablespoon gives the sauce a noticeable kick. Use more or less depending on how spicy you want it.
  • Lime Juice: Fresh lime juice brightens the sauce. Start with the juice from half a lime and adjust to taste.
  • Garlic Powder: A small amount adds savory flavor without overpowering the sauce.

For the Guacamole:

  • Avocados: Use 2 medium avocados or 3 small avocados. They should be ripe enough to mash easily.
  • Lime Juice: Lime juice adds freshness and helps balance the richness of the avocado.
  • Cilantro: Finely chopped cilantro gives the guacamole a fresh, herby flavor.
  • Salt: Taste and season as needed so the guacamole is flavorful.

For the Shrimp:

  • Shrimp: Any size shrimp can be used, but medium shrimp fit nicely on tostada shells.
  • Spices: Chili powder, cumin, salt, onion powder, garlic powder, and cayenne pepper create a smoky and spicy coating.
  • Oil: Olive oil works well for cooking the shrimp, but avocado oil, vegetable oil, or another neutral oil can also be used.

For the Tostadas:

  • Tostada Shells: Store-bought tostada shells make this recipe quick and easy. You can also fry corn tortillas if you prefer homemade shells.
  • Toppings: Shredded cabbage, diced tomatoes, queso fresco or cotija cheese, and sliced jalapenos are all great options.

How to Make Shrimp Tostadas

These spicy shrimp tostadas come together in just a few simple steps, and each component can be prepared while the others are waiting.

  1. Stir together the mayonnaise, sour cream, sriracha, garlic powder, and lime juice to make the creamy sauce. Refrigerate it while you prepare the rest of the recipe.
  2. Mash the avocados in a bowl. Leave them slightly chunky or mash until smooth, depending on your preference. Stir in lime juice and cilantro, then season with salt to taste.
  3. Place the shrimp in a large zip-top bag or bowl. Add the chili powder, cumin, salt, onion powder, garlic powder, and cayenne pepper. Toss or gently shake until the shrimp are evenly coated.
  4. Heat the oil in a skillet over medium heat. Add the shrimp and cook only until they are cooked through, turning as needed. Shrimp cook quickly, so keep an eye on them.
  5. Warm the tostada shells briefly in the oven so they are crisp and ready for toppings.
  6. Spread guacamole over each shell, add the cooked shrimp, layer on the toppings, and drizzle with the spicy sauce. Serve immediately while the shells are crisp.

Tips and Tricks

For the best flavor and texture, make the sauce first and let it chill in the refrigerator while you prepare the guacamole and shrimp. This gives the flavors a little time to blend and helps the sauce thicken slightly.

Shrimp cook very quickly, so avoid leaving them in the skillet too long. As soon as they are opaque and cooked through, remove the pan from the heat. Overcooked shrimp can become tough and rubbery.

Warming the tostada shells in the oven for a few minutes makes them taste fresher and keeps them crisp under the guacamole and toppings.

If you have leftovers, store the shrimp, guacamole, sauce, tostada shells, and toppings separately in the refrigerator. Assemble the tostadas just before serving so the shells do not get soggy.
