Description
These soft serve Icelandic Provisions Skyr cookie sandwiches are a quick, easy, gluten-free dessert idea with a creamy center and a satisfying cookie bite. The recipe includes two simple variations, so you can choose between raspberry skyr with chocolate chip cookies or coconut skyr folded with strawberries and paired with double chocolate chip cookies.
This is the kind of sweet treat that works when you want dessert without a complicated baking project. If you already have cookies on hand, the assembly takes just a few minutes. If you prefer to bake your own gluten-free chocolate chip cookies, let them cool completely before filling them so the skyr stays thick and creamy. The sandwiches are then placed in the freezer briefly, just long enough to set the filling and create a soft-serve texture without freezing them solid.
The raspberry version is bright, simple, and direct: spread raspberry skyr between two chocolate chip cookies and chill. The strawberry double chocolate version adds a small extra step by muddling strawberries with a pinch of sugar and a little balsamic vinegar before folding them into coconut skyr. Both versions are easy to prepare, easy to serve, and ideal when you want a chilled cookie sandwich dessert with minimal effort.
Ingredients
For the raspberry chocolate chip cookie sandwiches:
- Gluten-free chocolate chip cookies, homemade or prepared in advance
- 2 containers Icelandic Provisions Raspberry Skyr
For the strawberry double chocolate chip cookie sandwiches:
- Double chocolate chip cookies, preferably soft
- 2 containers Icelandic Provisions Coconut Skyr
- ½ cup sliced strawberries
- Pinch of sugar
- 1 tsp balsamic vinegar
Instructions
For raspberry chocolate chip cookie sandwiches:
If you are making your own cookies, let them cool completely before assembling the sandwiches. Spread 1 to 2 tablespoons of Raspberry Skyr onto the flat side of one cookie. Place another cookie on top and press gently to form a sandwich. Continue with the remaining cookies and skyr until all of the filling has been used. Arrange the finished cookie sandwiches on a tray or sheet pan.
For strawberry double chocolate chip cookie sandwiches:
Place the sliced strawberries in a small bowl with a pinch of sugar. Muddle them lightly, leaving some texture and small pieces of fruit rather than turning them into a completely smooth mixture. Add the balsamic vinegar and stir to combine.
Drain off any excess liquid, or use a slotted spoon to lift the strawberries from the bowl. Place the Icelandic Provisions Coconut Skyr in a medium bowl. Fold in the strawberries gently, mixing only until the fruit is evenly distributed through the skyr.
Spread 1 to 2 tablespoons of the strawberry coconut skyr mixture onto the flat side of one double chocolate chip cookie. Top with another cookie and press lightly to make a sandwich. Repeat with the remaining cookies and skyr mixture, then place the sandwiches on a tray or sheet pan.
Once all of the cookie sandwiches are assembled and arranged on trays, transfer the trays to the freezer. Let the sandwiches set for about 30 minutes. They should be chilled and firm enough to hold together, but not frozen solid. Remove from the freezer and enjoy right away.
Recipe Notes
For the best soft serve texture, do not skip the short freezer time. It helps the skyr filling firm up slightly, making the cookie sandwiches easier to pick up and eat. The goal is a creamy chilled center, not a hard frozen dessert.
Soft cookies work especially well because they are easier to bite into after chilling. If your cookies are very crisp, assemble them gently so the filling stays in place. You can make either version on its own or prepare both options for a simple gluten-free dessert platter with two flavors.
These Icelandic skyr cookie sandwiches are a fun choice for anyone who enjoys creamy cookie desserts, chilled treats, and fast no-fuss assembly. The raspberry chocolate chip version is straightforward and fruity, while the strawberry coconut and double chocolate combination has a richer flavor with a fresh berry finish.
